Berries and low fat yoghurt

Those of you who read my post yesterday will know I am running an experiment this week to see if I can keep to my foodie principles and follow the “rules” for Slimming Worlds red and green days.

Which didn’t get off to the best start when I slept in this morning! I still created a good breakfast: very low fat yoghurt plus raspberries and blackberries, all “free” food. So far, so boring. Nothing that a teaspoonful of Ile de Re honey and some raw cashews couldn’t sort out. My syn count was 1, so left feeling virtuous.

The 20 min nap had really caused lunch to go out the window, which left me lunching on a jacket potato (oven baked at least) and baked beans. Not exciting, but strangely comforting.

By the time evening came around, I needed good comfort food, and in my book that means risotto. I’d made veg stock

yesterday, so just had the fun of double podding the broad beans. It’s a task I really don’t mind, as I would so much rather see them in their vivid green loveliness! They were accompanied by a very lean piece of Duchy originals smoked bacon, and there was a dessert spoon of olive oil to get things going.

In between I started weighing and grating the Parmesan I was allowed. Do you know what a tablespoon of grated Parmesan looks like? It’s a lot! And worth having for the extra flavour. So this delightful dish full of risotto cost me another 4.5 syns, and I blew another 4 on a small glass of white wine. No foodie principles compromised, no Fry Light here!

Just one thing. I have a very sweet tooth, and I love my chocolate. I’m also not bad at willpower, so I have had one square of 1848 Noir Cafe chocolate that I bought in France. Perfect finish, and I am at a total of 12 syns out of the maximum of 15 you’re allowed. Not a bad start!
